Floor scales can be mounted underground or on top of the floor.  Underground installations are equipped with automated flushing systems to keep the floor opening clean.

Floor scales are connected to the recipe computer and fully integrated in the recipe process.

One common application for use of floor scales is the weight control of pre-fermented sour dough.

Poolish sponge or sour dough can be added directly in the mixing bowl and the BAKECONTROL 2008™ recipe computer adds all other ingredients to the finish dough mix.
